Cooking with Essential Oils
Having essential oils in your pantry is like having a herb garden in constant
full bloom, except the access is easier. Essential oils perfectly capture the
essence of the living plant, in both aroma and flavor. With the exception of
citrus oils, which need to be stored in the refrigerator, essences can be kept
for years in a cabinet ready for use.
Being concentrated, essential oils contain virtually all the plant's healing
nutrients, oxygenating molecules, amino acid precursors, co-enzymes, vitamins,
hormones, and more. And, because they are so concentrated, essential oils are
50-70 times more therapeutically potent than herbs. Essential oils provide
natural preventative care with their antibiotic and other medicinal properties,
as well as having a psychological effect.
Never use an essential oils that is not
therapeutic grade as it will be harmful.
An edible essential oil will be labeled "therapeutic-grade" and have a
"Supplement Facts" box on the label showing the nutritional value - do NOT use
just any brand of essential oil for cooking/flavoring foods.
Be sure to use pure oils from reliable sources, not synthetic scents or
flavorings. Absolutes are never used int he kitchen because of the solvent
residues that may be left as a by-product of the extraction process. It is wise
to use those essential oils that you think of as food.
Essential oils are very potent. One drop equals about 1 tablespoon of
dried herb.
Nothing is more important than dosage. Experiment, but be conservative until you
get the feel for how essential oils flavor food. Start with one drop and go from
there. As Elaine Pinar says, "If the recipe calls for 1 teaspoon, I rub the edge
of the bottle stopper on a piece of carrot or other chunky veggie. One-half
teaspoon would likely be about what would stick on the end of a toothpick. Since
everyone's taste is different you'll want to do the taste test."
Add essential oil towards the end of cooking as high heat will destroy
the therapeutic benefits.
Making your own flavoring extracts is easy, economical and a good way to reduce
dosage. Use olive oil for savory extracts. Start with 5 drops of essential oil
per ounce of carrier oil. Adjust to suit your taste.
RECIPES USING YOUNG LIVING ESSENTIAL OILS
NingXia Wolfberry Lemon Scones (submitted by Diane Kahler to Young Living)
2 cups flour
2 1/2 tbsp. Blue Agave
1 tbsp grated lemon peel
2 tsp baking powder
dash of salt
1/4 tsp baking soda
1/3 cup cold butter
1 cup Dried Wolfberries
1/4 cup lemon juice
1/4 cup soy or almond milk
1 egg
Combine flor, agave, lemon peel, baking pwder, salt and baking soda in a bowl.
Cut in butter until mixture resembles coarse crumbs. Set aside.
Combine wolfberries, lemon juice, milk and egg in a small bow. Add to flower
mixture and stir until a soft dough forms. Gently knead 6 - 8 times on a floured
surface. Pat dough into and 8" circle, cut into 10 wedges.
Separate wedges and place on a greased cookie sheet. Brush with 1 tbsp milk and
1 tbsp agave.
Bake at 400° F for 12 - 15 min or until lightly browned. Combine lemon butter
ingredients and serve with warm scones.
Spinach Frittata
2 Tbsp. olive oil
1 drop Basil Oil
1 drop Oregano Oil
1 bunch green onions, chopped
2 cloves garlic, chopped
10-oz. bag spinach
6 eggs
salt
pepper
1/3 cup plain yogurt
4 oz. feta cheese, crumbled
Mix olive, basil, and oregano oils in a frying pan. Add green onions and garlic,
and sauté on medium heat until tender. Add spinach in small bunches until wilted
and heated through. Set aside.
Whisk eggs, salt, and pepper together. Add yogurt to egg mixture and mix
thoroughly. Drain spinach and place in a nonstick cake or pie pan. Pour egg
mixture over spinach and gently mix. Add feta and bake in oven at 350° F for 20
minutes or until firm.
